About The Position

The Food and Beverage Director oversees all aspects of food and beverage service for the portfolio of properties, ensuring high standards of quality and guest satisfaction. This role involves strategic planning, departmental management, and operational efficiency to enhance the dining experience. The Director is key in maintaining profitability, staff training and development, vendor relations, and compliance with health and safety regulations. As a critical leadership position, the Food and Beverage Director collaborates with other departments to deliver a consistent and exceptional guest experience.

Requirements

  • Bachelor's degree in Hospitality Management, Culinary Arts, or related field.
  • 10+ years of experience in food and beverage management.
  • Experience in hiring, training, supervision, forecasting, budget preparation, and cost control in food and labor.
  • Proficient in training, coaching and counseling.
  • Strong understanding of food and beverage trends and industry best practices
  • Ability to make timely, effective decisions.
  • Ability to prioritize, organize and delegate work assignments.
  • Ability to maintain good team member relations.
  • Ability to direct performance of restaurant, kitchen and banquet team members and follow-up with corrective action where needed.
  • Must be aware of the importance of safety and security.
  • Endeavor to be conscious of safety and security at all times.

Responsibilities

  • Developing and implementing strategic plans for the food and beverage department.
  • Create and manage budgets and financial plans to maximize profitability.
  • Develop and enforce policies and procedures for efficient operations.
  • Delivering results on F&B revenues and margins including all F&B P&L line items.
  • Directly responsible for managing food and beverage cost
  • Utilizing interpersonal and communication skills to lead, influence and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
  • Encouraging and building mutual trust, respect and cooperation among team members by living the DKN values.
  • Identifying the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills.
  • Providing guidance and direction to team members in F&B, including setting performance standards, monitoring performance and completing performance evaluations.
  • Responsible for People Management alongside with GM from recruiting onwards.
  • Handling escalated complaints, settling disputes, and resolving grievances and conflicts, or otherwise negotiating with others.
  • Create and update menus in collaboration with chefs and culinary teams.
  • Ensure compliance with health and safety regulations
  • Perform other duties as assigned, requested or deemed necessary by management.
  • Lead the Home Away From Home Experience
  • Exceeding guest satisfaction through delivering outstanding service levels.
  • Responsible for all F&B and personnel brand standards if applicable.
  • Meeting or exceeding QA and Guest Satisfaction goals for the brand and DKN.
  • Part of the DKN Leadership Team working in collaboration with all disciplines of the hotel management team.
