Requirements

  • Bachelors Degree in Hotel/Restaurant Management or Hospitality is preferred.
  • Position requires 5+ years of Food & Beverage management experience. Minimum 3 years' experience as a Restaurant General Manager or Director of Food and Beverage is preferred.
  • Strong knowledge of Food & Beverage operations, product and preparation techniques.
  • Excellent skills in budgeting, expense management, inventory, payroll, labor costing, staffing, marketing, revenue generation, owner relations and P&L management.
  • Ability to read, understand and analyze financial statements and have the ability to speak to the results of those financials.
  • Strong communications skills, both written and verbal.
  • Natural leadership qualities with the ability to inspire a team and provide mentoring and development opportunities to high-potential talent.
  • Able to effectively deal with difficult situations and people while exhibiting integrity and professionalism.
  • Ability to work entire shift standing and/or moving in Banquets, Outlets and Kitchen areas, as needed.
  • Flexibility to work varied shifts including evenings, weekends, and holidays.

Responsibilities

  • Provide leadership of the Food and Beverage Department, to include outlets, culinary and Banquets & Catering.
  • Monitor outlets during peak periods to oversee production, flow and presentation.
  • Continuously strive to be special within the market. Identify and stay current on market trends within the industry
  • Actively participate in conversations about reconcepting The Commoner.
  • Create and implement new strategies to drive incremental revenue and profit, utilizing the 2026 Business Plan as a reference document.
  • Directly supervise and partner with the Executive Chef to provide excellent quality and presentation of all food.
  • Maximize revenue and profit through proactive marketing of the property’s food and beverage offerings.
  • Collaborate with Marketing Manager and Director of Sales & Marketing on programming and activations on-property.
  • Represent the property in the community through media and special events, as needed.
  • Review feedback from clients and associates, make judgements and take action to implement suggestions for improvement. Maintain warm, hospitable guest relations in all guest contact.
  • Drive overall F&B satisfaction scores and exceptional 3rd party reviews by providing outstanding product quality and service. Ensure prompt, courteous and professional responses to all guest complaints.
  • Achieve budgeted revenues and operate within budgeted guidelines by maintaining effective controls and developing long- and short-range financial objectives.
  • Develop and implement pricing, service and product strategies. Review and approve all menus and pricing in restaurant outlets and Banquets & Catering.
  • Partner with the Sales & Catering Department to review F&B minimums and selling guidelines.
  • Lead and participate in ongoing service education through facilitation of daily line-ups, regular team meetings and back- and front-of-house training programs.
  • Collaborate with staff to create a culture and supportive work environment founded upon respect, communication and performance.
  • Recruit, interview, hire, train and retain new associates. Direct the daily activities and assignments of staff, ensure appropriate coverage, develop and communicate departmental strategies and goals and assign/prioritize work.
  • As a key executive leader, motivate and inspire across departments.
  • Establish development opportunities for high-potential associates seeking growth.
  • Ensure appropriate standards of conduct, dress and appearance are maintained.
  • Assess and review the job performance of Food & Beverage associates. Coach and council through progressive discipline according to policy.
  • Support other property departments to ensure brand standards and offerings match the quality of The Commoner.
  • Responsible for the preparation of the annual budget and monthly forecasts.
  • Present monthly performance results, variance analysis and on-property/local F&B trends.
  • Develop a selection and pricing strategy for all liquors and wines and supervise their procurement.
  • Adhere to all safety, health and sanitation requirements.
  • Secure all Food and Beverage property and inventories.
  • Oversee condition of the physical asset through partnership with Director of Facilities and through annual capital planning process.
  • Support hotel policies and procedures.
  • Perform other duties as requested by leadership.
