Responsibilities

  • Leadership. Maintain positive team morale and ensure that the Los Tacos No.1 values are being upheld. Foster an environment of open communication, consistency, and teamwork - where employees take pride in their work and enjoy what they do.
  • Collaboration with "Front-of-the-house" (FOH) operations to ensure the best product is being provided to serve our guests.
  • People management and Development. Responsible for managing, training and developing of "Back-of-the-House" (BOH) leadership teams prep managers, prep leads and supervisors to ensure the team leads with passion and high-integrity towards the non-exempt team members and operations.
  • Oversee Quality Assurance food and safety; Responsible for high food quality at all New York City based locations. Quickly trouble shooting consistency and/or quality issues. Ensure all food is well prepared utilizing DOH guidelines and procedures.
  • Maintain compliance with all local/state/federal food handling and sanitation standards, including logs and documentation. Ensure that all systems and processes are consistently followed.
  • Culinary Operations & Processes Develop processes and protocols with upcoming commissary buildout that will assist with scalable and efficient areas of company growth
  • Work in collaboration with Plant Manager at Tortilla Shop to ensure all deliveries of tortilla/ masas arrive at Manhattan stores ensuring all the proper health and safety controls during deliveries
  • Develop highly productive Culinary Operation Systems, utilizing Google suite and R365
  • Maintain and organize files for recipes, food cost, and nutrition information. In depth analytical understanding of culinary operations: par-level, labor and waste management, making data-informed decisions on improvement of Los Tacos No.1 efficiency and scalability.
  • Work in collaboration with support center department head(s) and teams to ensure company and BOH teams are working in an effective manner
