About The Position

The Beverage Director leads all beverage operations across the resort, including casino bars, lounges, gaming floor service, restaurants, and pool areas. This role ensures regulatory compliance, cost control, and exceptional guest service in a 24/7 environment. Responsibilities include setting service standards, recipes, portion controls, and SOPs, while driving financial performance through menu engineering, pricing strategies, and waste reduction. The Beverage Director analyzes data to optimize revenue and guest engagement, oversees responsible beverage service programs, and enforces gaming floor alcohol policies. Adheres to all Company, Safety and Department policies and procedures. Fosters teamwork and provides excellent guest service, anticipates guest needs to exceed guest expectations. Builds brand loyalty by living the JW Marriott Core Values.

Requirements

  • Minimum of 5 years of progressive beverage management experience in high volume operations.
  • Minimum of 2 years of leadership experience in a casino or resort environment.
  • Experience with scheduling and staff management
  • Experience working in a resort pool or hospitality environment
  • Strong knowledge of beverage cost controls, inventory management, and compliance
  • Strong knowledge of cocktail development and casino beverage programing
  • Strong leadership and communication skills
  • Ability to work flexible hours, including weekends and holidays
  • Excellent problem-solving and decision-making abilities
  • Must be at least 21 years of age.
  • High school diploma or GED
  • Valid Clark County Health Card
  • Valid Las Vegas Alcohol Awareness Card (TAM Card)
  • Non-Gaming/Sheriff’s Card

Nice To Haves

  • Bachelor’s degree in Hospitality Management, Business, or related field.
  • Mixology Certificate

Responsibilities

  • Direct and oversee all beverage operations across the casino, including bars, lounges, gaming floor, pool, restaurant beverage programing and special events.
  • Develop, manage and monitor beverage budgets, labor plans, and forecast
  • Analyze beverage cost of sales, inventory variances, and revenue trends
  • Drive profitability through pricing strategies, menu engineering, and waste management
  • Control labor costs while maintaining service levels during peak resort operations
  • Ensure full compliance with local, state and gaming authority alcohol regulations.
  • Oversee responsible beverage service programs.
  • Lead development of cocktail, wine, beer, spirits and non-alcoholic beverage programs
  • Curate premium, VIP, and high-limit player beverage offerings
  • Evaluate industry trends and introduce innovative, brand appropriate beverage concepts
  • Oversee beverage presentation, glassware, bar layout, and equipment standards
  • Partner with purchasing to manage pricing, receiving, storage and inventory controls
  • Implement loss prevention and shrinkage measures
  • Recruit, hire, train, schedule, and develop beverage managers and frontline associates.
  • Establish performance expectations, conduct evaluations, and provide coaching and disciplinary action as needed
  • Foster a culture of safety, accountability, and excellent customer service
  • Prepare reports for senior leadership, boards, or governing bodies
