About The Position

White Oak Manor Charleston is seeking a dedicated and experienced Dietary Director to lead their dietary department. Located at I-26 and University Avenue on the Trident Hospital campus, the facility is committed to delivering high-quality care and exceptional service to its residents. The Dietary Director is responsible for overseeing all aspects of the dietary department, ensuring high-quality food service, regulatory compliance, and a positive dining experience for residents. This role plays a key leadership function in staff development, departmental operations, and interdisciplinary collaboration.

Requirements

  • Completion of, or enrollment in, an approved Dietary Manager’s Course
  • Training in food service with ability to read, write, and follow oral and written instructions
  • Knowledge of: Dietetics principles and special dietary requirements
  • Knowledge of: Food sanitation and service standards
  • Knowledge of: Large-scale food purchasing and preparation
  • Knowledge of: Labor laws and food service regulations
  • Knowledge of: Inventory management, budgeting, and reporting
  • Strong computer and keyboarding skills

Nice To Haves

  • Registered/Licensed Dietitian
  • Certified Dietary Manager (CDM)
  • Diet Technician with supervisory experience
  • Coursework in nutrition, personnel management, or supervisory training preferred

Responsibilities

  • Lead the dietary department in alignment with resident needs and facility goals
  • Train and mentor dietary staff to meet regulatory and quality standards
  • Collaborate effectively with interdisciplinary teams
  • Establish and achieve departmental goals
  • Oversee all dietary operations to ensure quality service delivery
  • Attend Department Head meetings
  • Maintain department within budget parameters
  • Manage food ordering and inventory
  • Track and process invoices accurately
  • Monitor staff performance and ensure adherence to company policies
  • Manage scheduling, overtime, and PTO approvals
  • Conduct interviews, reference checks, and onboarding
  • Complete performance evaluations and recommend merit increases
  • Administer discipline in accordance with company policy
