Centered around alpine cuisine, where we make our food from scratch. Position is Line Cook (Commis Chef), where you’ll be responsible for executing a specific or multiple line stations during service hours. Requirements
- Minimum Age: 18
- Idaho Food Safety Certification is preferred
- Knife Skills
- Knife Sharpening/Upkeep
- Sauteing, Searing, Grilling, Braising, Frying, Roasting
- Reducing, Simmering
- Open Flame Cooking, Sou Vide
- Proper/Safe Food Storage, Temperature Control, Proper/Safe Reheating
- Brines, Pickling
- The 5 Mother Sauces
- Ability to stand and walk for up to 8 hours per shift.
- Will lift up to 25lbs frequently, up to 50lbs occasionally.
- Exposed to fumes, odors, mechanical and burn hazards.
- Minimum education required - None
- Minimum time in a related position - Previous Line Cooking experience
- Non-Slip Shoes are Required
Responsibilities
- Prepare ingredients by chopping vegetables, butchering meat, or preparing sauces.
- Ensures all prep is done according to recipes and portion standards.
- Work in close liaison with chef.
- Cooks menu items in cooperation with the rest of the kitchen staff.
- Assembles dishes with attention to presentation and quality.
- Maintains a clean and organized workstation.
- Follows sanitation and safety procedures to ensure a hygienic kitchen environment.
- Must be willing to work with both the Back of House and Front of House teams.
- Must become knowledgeable of Schweitzer Mountain Resort facilities & services
- Other duties as assigned
