This hotel is owned and operated by an independent franchisee, Vivant Hospitality. The franchisee is a separate company and a separate employer from Marriott International, Inc. The franchisee solely controls all aspects of the hotel’s employment policies and practices, including hiring, firing, discipline, staffing, compensation, benefits, and all other terms and conditions of employment. If you accept a position at this hotel, you will be employed by a franchisee and not by Marriott International, Inc. Alma San Juan is a 56-room lifestyle boutique hotel located in the heart of Old San Juan. As part of Marriott’s Autograph Collection, we offer a distinctive guest experience rooted in personalized service, elevated design, and culinary excellence. Our property features three unique dining concepts: Mar y Rosa – A vibrant rooftop restaurant with modern flair, Andaluz – A refined destination for elevated cuisine and Café at Alma – A contemporary café serving locals and visitors alike. Position Summary The Cook is responsible for preparing and presenting high-quality dishes in accordance with hotel standards, brand guidelines, and established recipes. This role supports daily kitchen operations, ensuring consistency, food safety, efficiency, and excellence in every plate served. Level and seniority (Cook I, II, or III equivalent) will be determined based on experience, skills, and performance during the interview process.

Requirements

  • Previous culinary experience in a restaurant or hotel environment preferred.
  • Basic to advanced knowledge of cooking techniques and kitchen operations.
  • Understanding of food safety and sanitation standards.
  • Ability to work efficiently under pressure while maintaining quality.
  • Strong attention to detail and commitment to excellence.
  • Team-oriented mindset with a willingness to learn and grow.
  • Ability to stand for extended periods.
  • Ability to lift up to 50 lbs.
  • Ability to work in hot and fast-paced kitchen environments.

Responsibilities

  • Prepare ingredients and execute menu items according to recipes and presentation standards.
  • Maintain cleanliness, organization, and proper sanitation of workstations and kitchen areas.
  • Follow all food safety, HACCP, and company procedures.
  • Ensure proper storage, labeling, dating, and rotation of products (FIFO).
  • Monitor quality, consistency, and portion control.
  • Support prep, service, and closing duties as assigned.
  • Communicate effectively with kitchen leadership and team members during service.
  • Assist with inventory control and report shortages or discrepancies.
  • Maintain professionalism, teamwork, and a positive attitude in a fast-paced environment.

Benefits

  • Permanent position with a 9-month probationary period
  • Vacation Leave: Accrues at 1.25 days per month (15 days per year) for employees working at least 130 hours per month. Accrual becomes available after completing 6 months of employment and is retroactive to the hire date. Vacation may be carried over for up to 2 years, in accordance with company policy.
  • Sick Leave: Accrues at 1 day per month (12 days per year) for employees working at least 130 hours per month. Maximum accumulation of 27 days (216 hours). Up to 15 days (120 hours) may be carried over per calendar year, in accordance with company policy.
  • Health Insurance: 100% employer-paid coverage for the employee (minimum 130 hours per month), effective after 3 months of employment.
  • Parking Incentive: $5.00 USD for each day effectively worked.
  • Paid holidays effective after 3 months of employment.
