Under the direction of the Commissary Production Supervisor, the Commissary Production Foreman provides first-line leadership for one or more commissary production areas. This role is responsible for coordinating daily production activities, assigning and monitoring work, ensuring quality and food safety standards are met, and maintaining efficient production flow. The Commissary Production Foreman serves as the acting point of leadership during periods when the Commissary Production Supervisor is not present for the shift or a portion of the shift, ensuring continuity of operations, adherence to schedules, and timely issue escalation.

Requirements

  • High School Diploma or GED required.
  • Minimum 3 years of bakery production experience.
  • Demonstrated leadership capability in a production environment.
  • Strong understanding of bakery production timelines, quality standards, and food safety.
  • Ability to work nights, weekends, holidays, and extended hours as required.

Responsibilities

  • Assign, direct, and monitor the daily work of production staff within assigned areas.
  • Provide operational coverage and leadership when the Commissary Production Supervisor is not present.
  • Ensure production schedules, timelines, and delivery requirements are met.
  • Monitor staffing, workflow, and equipment utilization to maintain efficiency and output.
  • Escalate production, quality, staffing, or safety issues as needed.
  • Prepare and oversee the production of bakery products according to established recipes, quality standards, and production plans.
  • Project production needs for upcoming shifts and manage daily pars.
  • Mix bases, portion products, and prepare items for same-day and next-day production.
  • Monitor ovens, equipment, and processes to ensure consistent product quality.
  • Operate and oversee use of bakery equipment, including mixers, ovens, slicing, and wrapping machines.
  • Ensure strict adherence to all food handling, sanitation, and safety guidelines.
  • Check raw materials and finished goods for quality and compliance with specifications.
  • Maintain accurate production records, temperature logs, and required documentation.
  • Keep production areas clean, organized, and inspection-ready.
  • Assist with training and onboarding of new and existing employees.
  • Reinforce standard work, production processes, and quality expectations.
  • Provide real-time coaching to support performance and teamwork.
  • Monitor inventory levels, expiration dates, and proper product rotation.
  • Order or receive supplies as needed to support production.
  • Coordinate bakery deliveries and staging as required.
  • Communicate production status and issues to the Commissary Production Supervisor.
