The Chef de Partie is responsible for preparing special meals, regulating cooking temperatures, managing food thawing, ensuring proper portioning and garnishing, and maintaining food logs. This role involves monitoring food quality and quantity, communicating with the Chef and Food & Beverage service staff regarding menu items and specials, and preparing and cooking food according to established recipes and standards. Beyond culinary tasks, the position includes assisting management with hiring, training, scheduling, evaluating, counseling, disciplining, and motivating employees, while also serving as a role model. The Chef de Partie must adhere to all company and safety procedures, report maintenance needs and unsafe conditions, complete safety training, and maintain a professional appearance. Key aspects of the role also include anticipating and addressing guest service needs, communicating professionally, fostering positive working relationships, supporting team goals, and ensuring adherence to quality expectations.
