From your PASSION to ours: Lactalis USA, part of the Lactalis family of companies, is currently hiring a Cheesemaker Trainee based in Buffalo, New York. Summary: Responsible for the production of high-quality consistent product and correct kettle/processor formulation. To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.

Requirements

  • Previous food manufacturing experience preferred.
  • Ability to perform a multitude of tasks.
  • Strong communication abilities, written and verbal.
  • Knowledge of computer software preferred: Work, Excel, Power Point.
  • High School Diploma/GED required.
  • Associate degree in Dairy Science/Chemistry preferred.

Responsibilities

  • Produces high quality products in a consistent manner.
  • Ensure proper volumes of each raw material are entered into the kettles/processors.
  • Ensures proper pH is achieved in all kettles/processors.
  • Appropriately monitors and controls drain speeds.
  • Ensures proper moistures have been reached by checking moisture of every lot prior to sending it to packaging.
  • Maintains all proper documentation including recording charts, cheese-making log sheets, etc.
  • Inform supervisor of any production issues.
  • Ensures proper sampling of raw material, preblend, and whey.
  • Cleans and sanitizes equipment and lines.
  • Ensures homogenizers are at proper pressures.
  • Documents mass meter numbers where necessary.
  • Maintains a clean and sanitary work area.
  • Is aware of and practices Plant’s Good Manufacturing
  • Practices (GMP) as well as Good Sanitation Practices (GSP).
  • Upholds all rules pertaining to confidentiality of information regarding Sorrento products and recipes
