About The Position

As a Captain at the Mansion in MGM Grand, you will manage all dining aspects in alignment with hotel standards. Your role includes directing, implementing, and maintaining a service and management philosophy that guides your team to achieve 100% guest satisfaction. Requirements

  • High School Diploma, GED or equivalent
  • Work varied shifts, to include weekends and holidays
  • Must be 21 years of age or older
  • 2+ Years of Prior relevant experience in banquet and/or catering

Nice To Haves

  • Bilingual in Mandarin or Cantonese preferred
  • Previous Sommelier or equivalent wine experience preferred

Responsibilities

  • Meet with Chef and Stewarding to review scheduled group's menu and equipment requirements
  • Ensure agreement of delivery times, amounts and special arrangements
  • Train and direct Banquet wait staff; prepare and adjust weekly work schedules in accordance with staffing guidelines and labor forecasts
  • Monitor staff performance and appearance in all phases of service and job function, ensure procedures are carried out to departmental standards, rectify deficiencies with respective personnel
  • Anticipate guest needs, respond promptly and acknowledge all guests, and maintain positive guest relations
  • Knowledgeable of correct maintenance and use of equipment, requisition new equipment to replace those not up to standard and maintain enough equipment to service our functions as well as establish par levels for supplies and equipment
  • Knowledgeable of service requirements for menu selection, major ingredients, appearance, texture, quality standard, garnish and method of presentation
  • Check storage areas for proper supplies, organization and cleanliness; instruct designated personnel to rectify any cleanliness/organization deficiencies
  • Inspect the scheduled function areas/rooms for cleanliness, working condition and proper furniture/equipment set up, rectify any deficiencies with respective departments
