About The Position

BASIC FUNCTION: Ensure production of micro-brewed beer for service to Peter B’s patrons in accordance to established standards of quality. Promote complete guest satisfaction through pride in workmanship and by using all aspects of the STAR program. JOB TASKS: DEPARTMENT STANDARDS: Observe all departmental rules and regulations, dress code and appearance, behave in professional manner; demonstrate a friendly and ALL-STAR attitude to co-workers and all other hotel staff. Demonstrate teamwork responsiveness when asked to do any task consistent with Portola Hotel & Spa policies. STAR SERVICE STANDARDS: RECOGNITION – Address guests and employees by name. Whenever possible, welcome back returning guests and thanks them. FRIENDLINESS – Greet all guests and co-workers with a warm, friendly smile. Use every opportunity to initiate guest/employee contact by making eye contact, smiling and saying “good morning”, etc. PROFESSIONALISM – Handle all guest requests, inquiries and concerns as a professional. Take the appropriate action to deal with those needs and resolve issues always with the guest’s needs at heart. RESPONSIVENESS – The needs of our guests will always come first. Ensure that we anticipate those needs before the guest has to ask and respond promptly to ensure their satisfaction. REWARDS – Sincerely thank each guest for their business and invite them to return. HOSPITALITY SKILLS: Through individual effort and teamwork, employees will ensure all guest contact is handled in a friendly and professional manner, by anticipating guest needs, demonstrating sensitivity and responsiveness. Requirements

  • High School diploma or equivalent.
  • Must possess unexpired Serve Safe and TiPS credentials that certify in depth knowledge and application of proper food handling and sanitation, as well as responsible sale and service of alcohol.
  • Leadership: Must possess ability to motivate and supervise the outlet teams, in addition to handling general complaints, last-minute schedule changes, kitchen challenges and inventory issues. Demonstrates loyalty and commitment to Portola Hotel & Spa’s Purpose, Values, and Commitments. Must have strong interpersonal and diplomacy skills with the ability to maintain a calm and professional demeanor under pressure.
  • Organization: Must be able to stay focused during busy times and delegate tasks to employees to keep business running smoothly.
  • Office Administration: Must possess general office administration skills, including but not limited to Microsoft Office computer applications.

Nice To Haves

  • A 2-year associate's degree or 4-year bachelor's degree in a relevant field of study enhances prospects for employment and advancement.
  • Prefer experience with managing schedules and payroll.

Responsibilities

  • Manage all brewing, fermentation, filtering, kegging and serving operations.
  • Yeast management and propagation.
  • Order and inventory all necessary ingredients and cleaning chemicals.
  • Keep accurate and thorough brewing records, brew sheets and pack out reports.
  • Attention to detail in regards to following recipes, cleaning and sanitation procedures.
  • Schedule beer production with Peter B’s demand.
  • Day to day equipment maintenance and cleaning.
  • Ability to communicate the brewing procedure to Peter B’s staff and tour groups.
  • Recommend seasonal beer styles to Peter B’s restaurant management.
  • The brewer will be required to help set-up, assist with and breakdown all the draft equipment required for special events that are hosted by the Portola Hotel & Spa.
