About The Position

Responsible for the daily operation of the Beverage Department along with supervising additional food outlets. Leads the Beverage and Food & Beverage teams to meet financial and service goals. Oversees F&B Supervisor and ensures cohesive operations across all assigned outlets. Responsible for the strategic vision, execution, and continuous improvement of beverage and food service operations. Develops and maintains all beverage menus and pricing, and collaborates on food offerings. Works closely with Marketing to create and advertise new specialty drinks and food promotions for social media. Maintains prompt, friendly, efficient service to all customers and works to accomplish departmental goals and objectives.

Requirements

  • At least 5 years of food and beverage and casino operations experience and/or training or equivalent combination of same.
  • At least 5 years supervisory experience is required, preferably in multi-outlet operations.
  • Must possess broad knowledge of casino rules, procedures, and regulations, with strong organizational, communication, and leadership skills.
  • Knowledge of wines, beer, mixology, and food service operations required.
  • Excellent interpersonal, customer service, leadership, communication, team-building, and problem-solving skills are required.
  • Moderate computer knowledge of word processing and spreadsheet programs.
  • Proficient in Point of Sale systems and inventory control procedures.
  • Must have good analytical skills.
  • Must be able to have a flexible schedule and work weekends and holidays.
  • Must be able to maneuver to all areas of the casino, including all beverage and food service areas.
  • Must be able to work independently as well as in team formats.
  • Must be able to respond calmly and make rational decisions when handling guest and employee conflicts.
  • Must be able to perform mathematical computations quickly and accurately.
  • Must be able to conduct conversations with customers and employees and speak distinctly and persuasively with others.
  • Must have the ability to create written and financial reports.
  • Must be able to work at a fast pace and in stressful situations.
  • Must be able to read, write, speak, and understand English.

Responsibilities

  • Ensures the establishment and administration of accurate procedures and policies involving all operating activities including compliance with Colorado Gaming and Liquor rules and regulations.
  • Supervises the F&B Supervisor and provides leadership and guidance across multiple food and beverage outlets.
  • Coordinates with culinary leadership to ensure food quality, menu consistency, and service standards are upheld across all outlets.
  • Conducts regular reviews of food and beverage menus and updates in accordance with current trends, market conditions, and product availability.
  • Oversees product cost and inventory control methods and procedures for both beverage and food outlets.
  • Ensures staffing levels and labor costs are aligned with business volumes across all outlets.
  • Works with Internal Audit to ensure regulatory compliance concerns are mitigated and addressed.
  • Prepares annual budget and business plans for beverage and food outlets.
  • Monitors appearance and cleanliness of all facilities and service areas, ensuring standards are maintained at the highest level.
  • Acts as a role model to other team members, follows Family Style Service guidelines.
  • Develops and updates standardized procedures for beverage and food outlet team members.
  • Maintains and develops beverage and food service policies and procedures.
  • Oversees setup, sales, and breakdown at all special events involving food and beverage.
  • Interviews, hires, recognizes, disciplines, and/or terminates beverage and food outlet team members as required, using progressive discipline.
  • Resolves guest complaints and service deficiencies across all outlets.
  • Maintains and develops good relationships with vendors for both food and beverage supplies.
  • Fosters mentorship and development of Beverage and F&B team leaders and hourly team members.
  • Monitors legal compliance with federal, state gaming, liquor, and food safety laws.
  • Collaborates with other departments to ensure smooth interdepartmental operations and guest satisfaction across all outlets.
  • Conducts regular outlet inspections and service audits to ensure consistency and excellence in guest experience.
  • Supports training initiatives and cross-training programs to enhance team flexibility and service delivery.
