A Beef Modernization Sorter must possess strong observational abilities and perform precision knife cuts to make accurate decisions regarding pathology, presentation, or potential sanitary dressing deficiencies. This role operates in a high-paced environment where Food Safety and Quality are paramount. Beef Modernization Sorters undergo intensive and recurring training and are expected to train and educate others. They work closely with various harvest floor departments, including USDA-FSIS Consumer Safety Inspectors.
