From seasonal flavors and local butcher’s cuts to fresh seafood and imaginative desserts, we offer our guests a one-of-a-kind dining experience across our restaurants, banquet events, and offsite catering. We are currently looking for a Full-Time Banquets Pastry Cook to join our Triple 5-Star Culinary Team at Salamander Resort & Spa. The Banquets Pastry Cook will be responsible for producing high-quality pastries, desserts, and baked items for banquets and catering events. This position ensures that the highest standards of food quality, consistency, and presentation are achieved for all banquet and event operations.

Requirements

  • Must be available to work flexible hours, including weekends and holidays.
  • Thorough knowledge of pastry and bread-making techniques.
  • Strong understanding of accepted sanitation standards.
  • Experience with kitchen equipment such as slicers, mixers, grinders, and food processors.
  • Basic mathematical skills for understanding recipes, measurements, requisition amounts, and portion sizes.
  • Basic computational ability and computer skills.

Nice To Haves

  • Baking or banquet pastry experience preferred but not required.
  • Pastry degree preferred.

Responsibilities

  • Pastry Preparation: Prepare pastry items for banquet functions, buffets, and special events according to standard recipes.
  • Banquet Orders: Properly plan, prep, and execute Banquet Event Order (BEO) buffet and dessert plate-up orders on time.
  • Daily Event Pastries: Bake breads, cakes, and pastries needed for banquet and catering functions.
  • Event Support: Assist with setup, plating, and breakdown for banquet dessert stations and buffets as needed.
  • Presentation: Visually inspect baked goods to ensure proper color, appearance, and overall presentation for an appealing product.
  • Cost Management: Maintain food and labor costs within the budget while achieving the highest quality and consistency.
  • Storage & Freshness: Ensure proper storage of all pastry items in refrigerators and freezers to maintain product freshness.
  • Waste Minimization: Rotate food products properly to minimize spoilage and waste.
  • Equipment Maintenance: Ensure all equipment in the work area is properly cleaned and maintained.
  • Special Orders: Assist with special orders, buffet presentations, and cross-training in other kitchen areas as needed.
