About The Position

Responsible for production of food for all Banquet Functions and the food cost control for the Banquet Kitchen. In addition, ensures that the guests’ and owners’ expectations are exceeded.

Requirements

  • Above average mathematical skills necessary to prepare correct food production sheets.
  • Extensive knowledge of food products, standard recipes, and preparations.
  • Extensive knowledge of menu development.
  • Ability to supervise staff and accomplish goals on a timely basis.
  • Ability to create theme menus and special presentations.
  • Any combination of Education or work experience equivalent to that provides the required knowledge, skills, and abilities to succeed.
  • Florida Health Certificate.

Nice To Haves

  • Culinary education a plus.
  • Five years of experience as a Banquet Chef preferred.

Responsibilities

  • Hires, trains, and supervises banquet cooks involved in preparing, cooking, and presenting of food.
  • Monitors staff performance, product quality, production, and cost of all food.
  • Ensures that staff are maintaining cleanliness, organization, and sanitation of all kitchen prep, storage, coolers and freezers.
  • Organizes and prepares product requisitions and ordering.
  • Plans and creates prep and cleaning duties as dictated by daily business.
  • Ensures all food is ready on time for all functions, and is properly prepared, seasoned, and presented.
  • Ensures all food items are returned to the kitchen and properly stored, if the product can be reused.
  • Identifies items that can be sent to the café.
  • Audits to make sure that all food is properly stored and rotated for maximum shelf life.
  • Ensures proper sanitation and maintenance of kitchen area to comply with health code standards.
  • Ensures the quality of café food and products are of the same quality standards as we provide to guests.
  • Oversees the daily operation of the employee café regarding staffing, food quality, and cleanliness.
  • Monitors inventory for Pizza Hut products to ensure proper rotation, quantities, and freshness.
  • Creates monthly café menus.
  • Assists with creating Banquet menu items, as well as recipe testing.
  • Identifies ways to utilize products in the café and/or outlets to limit waste.
  • Assists in monitoring P.M. stewarding staff to ensure all cleaning duties are being completed.
