Job Description • Effectively supervises and coordinates the activities performed by Banquet staff during all food and beverage service to ensure that service standards are followed. • Responsible for controlling all aspects in the execution of banquet function. • Motivates staff and creates a positive, cohesive team to deliver exceptional service. • Ensures proper staffing and scheduling of all Banquet team. • Maintains knowledge of and adheres to organization’s policies and procedures. • Adheres to all liquor liability laws. • Ensures proper centerpieces are displayed on every table. • Inspects the cleanliness and presentation of all china, glass, and silver prior to use. • Sets tables according to type of event and service standards. • Reviews BEOs to ensure the proper set-ups are in place. Ensure banquet rooms, restaurants, and coffee breaks are ready for service. • Knows all banquet menus and beverages specified by the group and explains the major ingredients and preparation methods for each item to be served. • Conducts designated staff/pre-function meetings to make sure the team is prepared to provide service to the guest’s expectations, uniform is neat and professional, reviews assignments and the workflow for each event’s services. • Communicates additional meal requirements, allergies, dietary needs, and special requests to the kitchen. • Communicates service needs to chefs and stewards throughout functions. • Assists Banquet Servers in all food and beverage items for assigned banquet meetings and private events. • Drives company vehicle as needed to transport food, beverages, equipment, and supplies. • Resolves problems beyond expectations without consulting a supervisor or escalates as needed. • Ensures the staff is prepared to support current marketing promotions and/or events. • Ensures that guest and mystery shop feedback is communicated and that issues area appropriately resolved. • Checks in with guests and stays in contact throughout the event to ensure satisfaction. • Calculates charges for group functions, and prepares and presents checks to group contacts for payment. • Assists the F&B Operations Manager in the complete operation of the Banquet Department. • May establish and maintain guest network. • Participates in scheduled departmental meetings. • Maintains confidentiality of proprietary information, and protects company assets. • Maintains knowledge of correct use and maintenance of all equipment. • Maintains knowledge and promotes current promotions and events, advertising one or more features of the property. • Performs other duties as assigned. • Provides day-to-day direction and training to non-exempt team members. • Contributes to team members’ training and development but does not have hire/fire authority. • High school diploma or general education degree (GED). • Food Handler’s Certificate required. • RASS or TIPS Certification of alcohol awareness program must be obtained within 90 days of start of employment and maintain current certification. • California Responsible Beverage Service Training and Certification required upon hire. • Training in food, wine and liquor service preferred. • Must possess a valid California Driver’s license and maintain satisfactory record. • Must be 21 years of age or older. • 2-5 years of experience as a food and beverage staff working in a high volume restaurant, casino, or banquet facility. • Demonstrated leadership experience required. • Must have experience in handling different types of beverages. • Experience working in a casino environment preferred. • Previous Point of Sale System experience preferred. • Must be able to communication effectively, both verbal and written, in English. • Strong interpersonal and problem solving skills. • Self-motivated with attention to details. • Strong organizational skills to lead a team to a successful event. • Strong guest service skills. • Basic knowledge of Microsoft Office, Word, and Excel. • Knowledge of banquet functions, including room and table set-up, menu planning, and closing out functions. • Must be able to handle cash and coin transactions. • Possess a “Can Do” attitude. • Highly responsible and reliable. • Ability to work well with people with diverse background in a team environment. • Ability to focus attention on guest needs, remaining calm and courteous at all times. • Ability to work in a fast paced, high stress environment. • Ability to adjust to and manage change effectively. • Must be flexible to work different shifts. 85% of our Management Team have been promoted from within On our most recent Engagement Survey, 82% of our Team Members expressed that they were grateful to work at Viejas 40% of our Team Members have worked for us for more than 5 years and 23% for more than 10 years San Diego's Premier Gaming Resort, Viejas Casino & Resort is a AAA Four Diamond Award recipient since 2013.
