The Bakery Manager is responsible for leading all operations within the Bakery Department, ensuring high‑quality products, strong merchandising standards, excellent customer service, and compliance with food safety and sanitation requirements. This role oversees production planning, ordering, inventory control, department scheduling, shrink reduction, and the training and development of bakery associates. The Bakery Manager supports division programs, executes merchandising directions, and drives sales and profitability through effective department management. Key Responsibilities Customer Service & Department Leadership Deliver exceptional service to all customers, ensuring a friendly and welcoming bakery environment. Lead, train, and coach bakery associates; provide direction and daily task assignments. Maintain a positive work environment and promote teamwork and engagement. Ensure department readiness for all inspections, audits, and store leadership walkthroughs. Production, Freshness & Merchandising Oversee daily production planning to ensure adequate quantities of baked goods, donuts, cakes, and specialty items. Ensure all products meet company standards for quality, appearance, and freshness. Execute all schematics, planograms, and merchandising programs consistently. Maintain attractive, full, and organized displays that support promotional and seasonal themes. Oversee cake decorating standards, custom orders, and specialty product offerings. Inventory, Ordering & Shrink Control Order products, ingredients, and supplies to maintain proper inventory levels while meeting sales demands. Manage backroom and freezer organization, ensuring correct rotation and code‑date compliance. Monitor shrink and implement strategies to reduce waste, overproduction, and product loss. Ensure accurate labeling, pricing, and signage across all bakery items. Food Safety, Sanitation & Compliance Ensure compliance with all food safety, sanitation, and regulatory requirements. Maintain a clean, organized, and safe bakery department, including equipment, prep areas, and storage. Ensure proper handling, storage, and documentation for allergen‑containing products. Train associates in proper food safety, product handling, and cleaning procedures. Labor, Scheduling & Administrative Duties Prepare department schedules based on business needs, labor budgets, and production requirements. Approve timekeeping, manage training records, and ensure compliance with labor policies. Complete required reporting, including production logs, inventory counts, and shrink documentation. Participate in department and store meetings as required. Sales Growth & Business Support Monitor sales trends and adjust production to maximize sell‑through and minimize waste. Support weekly ad planning by preparing promotional items and displays in advance. Partner with store leadership to drive bakery department performance and achieve sales/margin goals. Foster vendor and supplier relationships that support product quality and merchandising.
