Especially the pizza. Arturo's Pizzeria features Brooklyn specialty pizzas in Las Vegas! The Village Cafe features grab and go items so you can eat on the run and get back to the fun. Yogurts, sandwiches, specialty coffee drinks and pastries await your indulgence, along with an assortment of beverages, frozen foods, and snacks. Located in the main lobby next to the front desk, the Wiki Wiki also has a great selection of Tahiti Village logoed merchandise, including T-shirts, polo shirts, hats, and much more. ROLE The Assistant Director of Food and Beverage is primarily responsible for overseeing the outlets of Letz Go Gaming Operations. This position will work closely with the Letz Go Gaming Director of Operations, and the Executive Chef to ensure the standards of service and safety guidelines are met as well as perform other job tasks as assigned.

Requirements

  • Five years of management experience in a food and beverage setting
  • One year of experience in Microsoft Word and Excel
  • Sheriffs, Health, and TAM cards are required
  • Culinary background, strong P&L experience

Responsibilities

  • Develop and maintain positive working relationships with others, support team to reach common goals, and listen and respond appropriately to the concerns of employees and guests.
  • Ability to respectfully supervise employees in all food and beverage outlets
  • Oversee all front and back of the house restaurant operations in Wiki Wiki & Village Café, Arturo's, 17 South, banquets, special events and Pool Bars. Responsibilities also include overseeing Mahana Spa and Tiki Cove Arcade.
  • Complete scheduled inventories and work with accounting to ensure proper month end closing procedures are met
  • Approve FOH schedules and ensure they meet budgeted labor
  • Ensure compliance with federal, state, and local food sanitation and safety regulations, gaming and Alcohol Awareness guidelines. You must be knowledgeable about the most updated laws and guidelines and are responsible for communicating such information to staff.
  • Responsible for interviewing, hiring, and training personnel.
  • Inspect kitchen and bar equipment to ensure working condition, assist in submitting capital improvements
  • Create and train staff on cash handling procedures in accordance with accounting and company policies. This includes but is not limited to managing the proper use of POS system, pay methods, promotions and approvals. Additionally, the F&B Supervisor is required to assist in reconciliation of cash banks and securing bank and related reports and documentation.
  • Properly handle guest's complaints and finalize recoveries
  • Collaborate within the food and beverage team to create and implement new ideas
  • Maintain knowledge and ensure compliance with departmental policies and standard service procedures
  • Monitor and ensure completion of orders, administer all maintenance projects plus communicate with engineering staff for all repairs
  • Analyze staff evaluations and feedback to improve the customer's experience
  • Attend monthly P&L meetings
  • Follow all company and safety and security policies and procedures; report accidents, injuries, and unsafe work conditions to manager; and complete safety training and certifications.
  • Ensure uniform and personal appearances are clean and professional, maintain confidentiality of proprietary information, and protect company assets.
  • Stand, sit, or walk for an extended period of time. Move, lift, carry, push, pull, and place objects weighing less than or equal to 10 pounds without assistance.
  • Perform other reasonable job duties as requested by Director.
