AM Kitchen Lead The kitchen lead position is expected to lead by example, delegate, train and correct in a teaching approach, all with Southern Hops' established policies and procedures in mind. The job consist of but not limited to training on all stations, food ordering and putting away when delivered, scheduling, daily communication with the PM Lead position and weekly meetings with management. In this position the AM Lead will need to be experienced as a line cook, pizza cook, and prep cook, as well as the ability to make dough and large batch items. Knowledge of how to keep food cost, waste, and labor to a minimum is essential as the AM Kitchen Lead. It is important that the AM Lead has a positive attitude and can use effective communication to resolve challenges. This position works at least 40 hours/week. Summary of Cooks and Line Cook The Line Cook is capable of accurately and efficiently executing the preparation of all salad, sandwich, grill, pizza, and saute items while meeting presentation and timing standards, assists others in the kitchen, and maintains a clean, well-stocked and organized work area. Also, preps food items for service. All kitchen staff have the opportunity to move up in the company.

Requirements

  • Good communication skills
  • Previous experience with grilling, salad, sandwich, pizza, and entree preparation
  • Experience with prepping batch items and food from specific recipes
  • Able to accurately read and communicate orders
  • Well organized, shows a sense of urgency; able to track multiple orders and multitask
  • Works well under pressure
  • Team player, works productively with others
  • Understanding and adhering to all food safety practices required by SC DHEC
  • A minimum of 2 years of experience in kitchen preparation and cooking and at least 6 months experience in a similar capacity
  • Must be able to stand and exert well-paced mobility for several hours at a time
  • Ability to lift and carry 0-25 pounds on a regular basis, throughout the shift
  • Must be able to push and pull equipment of various sizes and weights
  • Must be able to kneel, bend, stoop, squat and stretch to fulfill tasks.
  • Requires grasping, standing, walking, repetitive motions, hearing ability and visual acuity.
  • Presents self professionally, e.g. clean uniform, well groomed

Responsibilities

  • Training on all stations
  • Food ordering and putting away when delivered
  • Scheduling
  • Daily communication with the PM Lead position

  • Maintaining high standards of cleanliness, safety and food safety throughout the shift
  • Adhering to all standards and procedures listing in Southern Hops' Handbook, Training Manuals, and worksheets.
  • Maintains up to date knowledge of recipes, procedures and plating for all menu, special and promo items for which he/she is responsible
  • Prepares prep items, grill, salad, sandwich, entree items to recipe or special order
  • Meets timing and proportion standards
  • Coordinates orders with others
  • Assists coworkers as needed
  • Works cooperatively with front of house staff to respond to guest needs
  • Ensure areas of responsibility are well stocked and guest ready
  • As required: stock taking, rotating stock, cleaning, opening and closing tasks; and any other duties designated by the management team or Kitchen Leader.
