The dishwasher is responsible for maintaining cleanliness and sanitation standards for dishes, glassware, flatware, pots, pants, etc. using both machine and manual cleaning methods. This position will maintain kitchen, work areas, equipment, and utensils in a clean and orderly condition. You will place clean dishes, utensils, and equipment in storage areas, and will prepare and package individual place settings. Managers may direct the dishwasher to stock supplies such as food and utensils in serving stations, cupboards, refrigerators, and salad bars, transfer supplies and equipment between storage and work areas, and sort and remove trash, placing it in designated pick up areas. The role is responsible for the full cycle of dishwashing, including loading, running, and unloading the machine, ensuring proper cleaning and sanitation temperatures. It also involves maintaining cleanliness and sanitation for hand-washed items like pots, pans, and trays. Duties include sorting and rinsing dirty dishes, stacking clean dishes, transporting them to storage, changing dishwater hourly, sorting trash, filling/emptying soak tubs, sweeping, scrubbing, and mopping floors, and maintaining the dish pit. The dishwasher must notify management if dish machine wash or rinse cycles fall below safety standards and monitor temperatures. Other tasks include cleaning garbage cans, avoiding cross-contamination between dirty and clean dishes, monitoring and reporting functional/mechanical problems, cleaning walls, and preparing various foods. The position also involves continuously seeking opportunities to improve the customer experience and following safety and sanitation procedures according to OSHA, Department of Public Health, and Risk Management guidelines.
