About The Position

As a Sous Viennois Baker, you will work closely with the Head Baker to assist in all aspects of our Viennoiserie production. You will be responsible for overseeing Viennoiserieproduction and maintaining a clean and organized workspace. Your passion for baking and teamwork will be essential in delivering high-quality breads that our customers love.

Requirements

  • Previous experience in Viennoiserie or in a similar baking role; a culinary degree is a plus.
  • Strong knowledge Viennoiserie techniques and ingredients.
  • Ability to work in a fast-paced environment and manage multiple tasks efficiently.
  • Excellent teamwork and communication skills.
  • Flexibility to work early mornings, weekends, and holidays as needed.

Nice To Haves

  • a culinary degree is a plus

Responsibilities

  • Assist the Head Baker in the preparation and baking of various laminated dough types and specialty pastry
  • Scale and mix ingredients according to established formulas, ensuring consistency and quality.
  • Monitor fermentation, proofing, and baking times to achieve the desired outcomes.
  • Maintain cleanliness and organization of the baking area, adhering to food safety and sanitation guidelines.
  • Operate and maintain baking equipment, such as ovens and mixers.
  • Collaborate with Head Baker and team to continue development of the Viennoiserie program and offerings
  • Assist in inventory management, including ordering and receiving supplies.
  • Train and mentor apprentice bakers and kitchen staff as necessary.
