Responsible for the heavy-duty cleaning/sanitation of kitchen work areas and equipment including stoves, hoods, ovens and ceilings. ROLE AND RESPONSIBILITIES: (INCLUDES BUT IS NOT LIMITED TO THE FOLLOWING) Breakdown stove lines: pull out equipment parts at waist-high level in a standing position. Cleaning stove and stove hoods: stand on a ladder with arms extended overhead using circular motion for short periods of time. Dish washing: manually put dishes in dish washing machine while standing for extended periods of time. Change deep fryers: lift fryer and drain oil, either by lifting the fryer bucket and/or releasing the drain lever on the bigger unit. Clean fryer using scouring pad in a circular motion and replace oil. Clean rotary ovens: climb and crawl into the oven itself until lying down, cleaning with arms outstretched for a short period of time. Cleaning ceiling tiles: climb ladder, stand with arms extended overhead and scrub ceiling tiles for short periods of time. PERFORMANCE REQUIREMENTS: (Knowledge, skills and abilities) Ability to read, write, speak and understand the English language in order to complete production requirements and communicate with other employees. Ability to understand written English to read any caution or safety notices. Ability to comprehend and follow instructions from supervisor. Ability to understand verbal English in case of emergency situations. Communicate with supervisor throughout the shift. Ability to perform duties within hot to normal to cold temperature ranges. Sufficient manual dexterity of hand in order to use pressure washer, four decker, ladders, scrapers, squeegees, gloves, boots, push broom/mop, chemicals, green pads, grill bricks and dish machines. This position requires considerable physical activity on a continuous basis throughout the shift including working in confined spaces and awkward positions, requiring standing, crouching, kneeling, stooping and reaching overhead for extended periods of time. Ability to operate kitchen equipment including dish machine. Check station before, during and after shift for proper set-up and cleanliness. Ability to comprehend product labeling instructions to enable the safe application of products and processes with the Hotel. Good working knowledge of accepted standards of sanitation. Ability to maintain attendance in conformance with standards. Ability to maintain a neat, clean and well-groomed appearance.
