The Trusser Labor position at Tyson Foods in Carthage, TX, is a full-time role on the 2nd shift, specifically from 3:45 PM to 2:00 AM, Monday through Friday. This position is critical in the poultry processing line, where team members are responsible for the trussing of birds as they pass through the production area. The trusser is positioned strategically to ensure that the birds are processed efficiently, with a required rate of 13-15 birds per minute for full body trussing and 16-18 birds per minute for hock trussing. The primary responsibility of the trusser is to inspect the birds for quality, ensuring that they meet Grade A standards. This includes checking for feathers, neck attachments, and any physical defects such as discoloration or broken wings. Birds that do not meet these standards are removed from the line and placed in a designated tub for further processing. In addition to the inspection and trussing tasks, the trusser is responsible for applying truss bands around the legs and/or wings of the birds based on the specific order requirements. Once trussed, the birds are sent to the marinator for further processing.
