About the position

The Teppan Chef at Benihana is responsible for providing an engaging and entertaining dining experience for guests by cooking and preparing meals on hibachi tables in front of them. This role involves not only culinary skills but also guest interaction, ensuring food quality, and maintaining cleanliness in the kitchen and dining areas.

Responsibilities

  • Greet and welcome guests within 15 minutes of their teppan order(s).
  • Perform a cooking show for assigned tables, ensuring appropriate and courteous interaction with guests.
  • Provide guests with information about Benihana foods during cooking or upon inquiries.
  • Respond promptly and courteously to guest requests and follow their cooking preferences.
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using various kitchen equipment.
  • Perform shift opening and closing duties as assigned by the manager, including cleaning refrigeration units and chef carts.
  • Maintain cleanliness and organization in kitchen, teppan cooking areas, and food storage areas.
  • Report any kitchen equipment or maintenance issues to the chief chef or manager on duty.
  • Comply with the Company's standards on food portioning, cooking methods, and quality standards.
  • Prepare foods according to the Company's portion standards and recipe specifications prior to cooking.
  • Adhere to guidelines on proper food presentation and garnishes for all dishes.
  • Handle, store, label, and rotate foods properly in accordance with public health safety laws.
  • Understand and follow FIFO method for food handling.
  • Use knives and kitchen tools to prepare food for the dining room.
  • Adhere to Company guidelines on alcoholic beverage service.
  • Present a clean and neat appearance and use courteous manners with all guests.
  • Notify MOD immediately when guests are not satisfied or if an accident occurs.
  • Participate in ensuring guest special occasion celebrations are memorable.
  • Photograph and/or be photographed with guests upon request or direction from the company.
  • Perform other duties as assigned by a supervisor.

Requirements

  • Must have a High School diploma or GED.
  • Must be able to successfully pass Benihana chef training program.
  • Previous experience as chef or cook is highly desirable.
