The primary responsibility of the Table Operator is to operate the drain table and fines saver during the cheese-make process. The Table Operator monitors cheese curd pH and moisture and transfers curd to the hoop filling machine. We have multiple summer seasonal openings working a 2-2-3 rotation schedule. The schedule will either be 1st working the hours of 4:00am to 4:00pm or 2nd Shift hours of 4:00pm to 4:00am.
