About The Position

The Sushi Chef at STC Shakou Restaurants is responsible for the preparation, production, and presentation of sushi and other menu items. Requirements

  • Food Handlers certificates are required.
  • Basic reading and writing skills.
  • Excellent interpersonal and customer service skills.
  • Well-organized and multi-task oriented.
  • Excellent communication skills.

Nice To Haves

  • No previous Sushi Chef experience is necessary but preferred.
  • Ability to shadow another Sushi Chef for training.

Responsibilities

  • Prepare food items and ingredients needed for menu items, including sushi, maki, nigiri, and sashimi according to prescribed recipes and special requests.
  • Follow prescribed portioning controls and maintain food safety and quality standards.
  • Prepare plate presentations according to tickets or as directed by the Executive Chef or Head Sushi Chef.
  • Maintain open communication with the Head Sushi Chef regarding any concerns or challenges in fulfilling orders.
  • Wash and clean raw food products, ensuring proper hold times for refrigerated items.
  • Inspect and clean food preparation areas to ensure safe and sanitary food-handling practices.
  • Set up, operate, break down, and clean all kitchen equipment.
  • Assist with stocking and organizing daily and weekly deliveries and setting up kitchen stations.
  • Assist the Head Sushi Chef as directed.
