The Specialty Sushi Chef/Cook is responsible for all types of cooking functions required for the preparation of specialty (Sushi) menu items. The Specialty Sushi Chef/Cook prepares of all proteins, vegetables, sauces and side items required for the sushi bar.

Requirements

  • 2+ years Sushi Cook experience working in a high volume and upscale establishment.
  • Ability to satisfactorily communicate in English (speak, read, write) with guests, co-workers and management
  • Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum amount of supervision.
  • Ability to accurately follow established recipe and technique guidelines
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
  • Ability to work well under pressure and handle multiple tasks at once.
  • Ability to be well organized, maintain concentration, and think clearly while providing service to many guests at any given time.
  • Punctuality and regular and reliable attendance.
  • Interpersonal skills and the ability to work well with other team members and the public.
  • Must be available to work Dinner Shifts.
  • Work requires ability to work from a standing position for extended periods of time.
  • Work requires a neat appearance with good personal hygiene.

Responsibilities

  • Prepare specialty food items in accordance with kitchen needs.
  • Prepares portions and garnishes hot and cold foods.
  • Perform various job duties that will include operation of grill, fryer, broiler, oven and French top in accordance with kitchen needs.
  • Perform preliminary preparation work in a timely manner.
  • Ensures ingredient supply levels are accurate.
  • Move items from shelves to carts and transport to assigned stations for restocking purposes.
  • Maintains the required par of food items in their assigned station from support areas.
  • Understand proper safety and health codes and regulations and maintain them regularly.
  • Ensure all areas assigned are clean and free of debris
  • To assist with any other job-related duties that may be assigned.
  • Reviews prep list daily and completes all prep required according to sushi bar specifications provided by the Head Sushi Chef
  • Ensures sushi bar stations, prep area, and refrigerators are kept clean and organized at all times
  • Oversees first in/first out process to ensure items are utilized before their expiration date
  • Receives, inspects, and puts away all sushi bar items when they are received
  • Prepares sushi rice according to recipe guidelines.
  • Provides Family Style Service at all times.
