About The Position

The Stewarding Manager is responsible for maintaining an immaculate backstage area at all times, monitoring department payroll, supplies usage, and chemical usage. The role includes maintaining adequate CGS on a monthly basis and advising the F&B Director of potential shortages, as well as maintaining all kitchen equipment and ensuring outlets are cleaned and supplied with CGS for quality operation. The manager will assist in any and all areas as needed.

Requirements

  • Experience in managing a stewarding department or similar role.
  • Strong leadership and team management skills.
  • Ability to conduct interviews and manage payroll.
  • Knowledge of health and safety regulations.
  • Experience in inventory management and cost control.

  • Previous experience in a hotel or restaurant environment.
  • Familiarity with food service operations.

Responsibilities

  • Responsible for the efficient and effective management of the stewarding department.
  • Screen and interview qualified/potential applicants for employment.
  • Prepare weekly schedules and daily payroll edits.
  • Approve staff-match and IHS bills/invoices and turn in for payment.
  • Control requisitioning and distributing of china, glass, and silverware.
  • Coordinate monthly inventories of all operation equipment.
  • Review and implement corrective action for Board of Health code violations.
  • Assist chef with banquet dish-ups.
  • Maintain adequate CGS inventory.
  • Inspect kitchens and store rooms to ensure cleanliness and sufficient supplies.
  • Coordinate work on non-cooking kitchen and storeroom workers.
  • Establish controls to guard against theft and wastage.
  • Confer with Executive chef or food service manager concerning banquet arrangements.
  • Attend weekly catering, safety, and F&B meetings.
  • Conduct monthly department meetings.
  • Provide effective leadership and discipline for employees.
  • Maintain and monitor control of operating expenses.
  • Forecast and monitor labor costs.
  • Attract, retain, and motivate the best talent.
  • Ensure team members receive proper training.
  • Monitor, measure, and recognize performance of team members.
  • Support, comply, and promote company initiatives, policies, and guidelines.
  • Handle employee issues in a professional and timely manner.
  • Utilize and collaborate with resources across different departments.
