About The Position

The Stewarding Manager is responsible for maintaining an immaculate backstage area at all times and assisting the Executive Steward with various operational tasks. This includes monitoring payroll, supplies usage, and chemical usage, as well as maintaining adequate CGS on a monthly basis and advising the F&B Director of potential shortages. The role also involves maintaining all kitchen equipment and assisting with cleaning and supplies for quality operation. The Stewarding Manager will assist in any and all areas as needed.

Requirements

  • Knowledge of all aspects of kitchen operation and general sanitation codes.
  • Highly motivated with the ability to lead by example.
  • Able to communicate, delegate, and follow up on assigned job tasks.
  • Supervisory skills necessary.
  • Demonstrable expertise in analysis and action taking.
  • Excellent oral and written communication skills.
  • Excellent organization skills.
  • Appropriate professional appearance and demeanor.
  • Proficient in Microsoft Word, Excel, and PowerPoint.

Responsibilities

  • Assist the Executive Steward with the efficient and effective management of the stewarding department.
  • Screen and interview qualified/potential applicants for employment.
  • Prepare weekly schedules and daily payroll edits.
  • Review temp agency bills/invoices as needed.
  • Assist with requisitioning and distributing china, glass, and silverware.
  • Coordinate monthly inventories of all operational equipment.
  • Assist the Food & Beverage Department with reviewing and implementing corrective actions for Board of Health code violations.
  • Assist the chef with banquet dish-ups.
  • Maintain adequate CGS inventory.
  • Inspect kitchens and storerooms to ensure cleanliness and sufficient supplies.
  • Coordinate work of non-cooking kitchen and storeroom workers.
  • Establish controls to guard against theft and wastage.
  • Confer with the Executive Chef or food service manager concerning banquet arrangements.
  • Attend weekly catering, safety, and F&B meetings.
  • Provide effective leadership and discipline for employees.
  • Maintain and monitor control of operating expenses.
  • Forecast and monitor labor costs.
  • Attract, retain, and motivate the best talent.
  • Ensure team members receive proper training.
  • Monitor, measure, and recognize performance of team members.
  • Handle employee issues in a professional and timely manner.
