Oxford Casino Hotel, located in Oxford, Maine, is indeed part of Churchill Downs Incorporated and has seen significant growth since it opened in 2012. Position Summary Responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Supervisors.

  • Must have the ability to multi-task and communication skills for safety.

Responsibilities

  • Cleans according to standards the following items and areas: Broilers, deep fryers, grills, ovens, range hoods, ware washing machines, and floors and walk-ins.
  • Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
  • Knows and practices Health and Safety standards as set forth by governmental agencies.
  • Washes hands at each possible point of contamination.
  • Cleans, deck brushes, and mop all kitchen floors.
  • Follows 3-compartment sink procedures.
  • Weekly de-liming of each dish machine.
  • Uses all chemicals according to use and knows where sheets are located.
  • Report any malfunctions of the dishwashing machine, (including temperatures too low or too high) or any other type of equipment used.
  • Sets up, breaks down, and maintains all dishwashers.
  • Empties all trashes and cardboard boxes to the dumpsters.
  • Must have the ability to multi-task and communication skills for safety.
  • Gives good internal customer service to the team members.
  • Cleans and maintains all cooks’ lines.
  • Any other duties as prescribed by supervisors to maintain kitchen. These may include but are not limited to the following: cleaning the ice machines, cleaning hand sinks, fill paper towels and soap dispensers, use and clean floor signs, etc.
  • Clean and Change hood screen filters. Be familiar with operation of hood and auto cleaning system.
  • Check and refill auto clean system as necessary.
  • Clean All Shelving in Coolers and Storage areas
  • Understand shelving systems and connections- able to take apart and clean thoroughly
  • Pull Out all Equipment and Clean underneath and Behind
  • Familiar with equipment operation, how to clean safely, understanding of hot surfaces, oil safe handling of equipment in both prep and kitchen production areas
  • Remove Drawers from Reach-in Cooler Units and Clean Inside
  • Power wash + scrub floors weekly.
