About The Position

Butcher's primary responsibility to cut and trim large portions of meat consistently and effectively.

Requirements

  • Min. 3 years of butchering experience; culinary school background preferred.
  • Excellent knife skills
  • Knowledge of proper rotation and storage of meats, seafood, poultry.
  • Ability to multi-task and work well in a fast paced environment
  • Heavy work load and standing for prolonged periods of time necessary
  • Possess a Riverside County Department of Environmental Health Food Handlers Certificate or be able to obtain a Riverside County Health Department card within one week of employment.

Responsibilities

  • Cut and process meat, poultry and fish, cube steaks, grind ground meats, according to menu specifications and requirements
  • Perform all meat associate responsibilities, assisting chefs and cooks with different tasks
  • Weigh all meat items in accordance with specified procedures
  • Develop product knowledge in all areas of the meat department including cooking procedures
  • Keep kitchen areas clean and tidy
  • Comply with hygiene, quality and safety standards at all times
  • Provide excellent guest service to both guest and internal clients.
  • Must adhere to all Tribal Ordinance, Regulations, and the ACCRS and SRC System of Internal Controls, and Standard Operating Procedures.
