Requirements

  • 6–12 months of experience as a prep or line cook, or recent culinary training.
  • Solid knife skills and attention to detail.
  • A willingness to learn concept-specific fundamentals (Italian cuisine a plus!).
  • Team-first attitude, ability to take direction, and a professional presence.

Responsibilities

  • Master the fundamentals: daily prep, recipe scaling, portioning proteins, and proper labeling/rotation.
  • Run and maintain entry-level stations such as garde manger, fry, or pantry.
  • Cook and finish menu items to spec, ensuring textures, sauces, and plating are perfect every time.
  • Support higher-level cooks by prepping sauces, dressings, and accompaniments.
  • Maintain sanitation and organization of your station while keeping up with the pace of a busy casino restaurant.
  • Work side-by-side with seasoned chefs, learning Italian-inspired techniques like fresh pasta and classic sauces.
