About The Position

The Sous Chef at San Vicente Bungalows is responsible for exhibiting culinary talents while assisting in leading the kitchen staff and managing all food-related functions. This role focuses on improving guest and employee satisfaction and maximizing financial performance across various food preparation areas, including banquets, in-room dining, and restaurants. The Sous Chef will oversee food quality, staff training, and operational efficiency, ensuring that all culinary standards are met and maintained.

Requirements

  • High school diploma or GED required; college degree in culinary arts or food & beverage preferred.
  • Minimum of 2 years' experience as a Sous Chef in a fine dining environment.
  • Experience in quality food production in a multi-outlet, high volume kitchen.
  • Certification: Must possess Food Protection Certificate.
  • Basic knowledge of arithmetic and ability to input data on a computer.

Nice To Haves

  • Bilingual in Spanish preferred.
  • Experience with menu development preferred.

Responsibilities

  • Assisting the Executive Chef in directing day-to-day operations, including banquet functions and timely food production.
  • Supervising and coordinating activities of cooks and kitchen staff engaged in food preparation.
  • Managing line cooks and ensuring consistent food production methods and standards.
  • Setting written par levels for all food items needed and monitoring quality of raw and cooked food products.
  • Demonstrating new cooking techniques and equipment to staff and mentoring them.
  • Developing and implementing guidelines for purchasing and receiving areas.
  • Managing controllable expenses including food costs and supplies.
  • Participating in the budgeting process for kitchen operations.
  • Providing direction for menu development and food presentation.
  • Inspecting freezers and refrigerators for cleanliness and proper temperatures.
  • Ensuring compliance with food handling and sanitation guidelines and training kitchen employees accordingly.
