About The Position

The Teaching Kitchen Sous Chef for Bon Appetit Management Company assists in the ownership of the overall operational success of the Culinary Education Program. This entails adhering to the client’s culture and guidelines, supporting and facilitating client developed or contracted curriculum, and Bon Appétit standards of food quality, freshness and presentation. This position is responsible for the teaching kitchen’s daily administrative, operational, and culinary tasks, including sanitation and safety. In addition, the teaching kitchen sous chef also coordinates with the cafe Chefs to motivate, train, develop and direct the employees to accomplish the objectives of the operation and maintain a positive relationship with the client. Bon Appétit Management Company operates more than 1,000 cafés around the country for corporations, universities, and museums, as well as a few dozen public restaurants. They lead the industry in socially and environmentally responsible sourcing, from sustainable seafood to cage-free eggs, and cook everything from scratch using fresh, local ingredients.

Requirements

  • Has a minimum of 2 years kitchen supervisory experience or applicable culinary experience in a similar volume, quality food service establishment
  • Has a minimum of 1-year instructional food or retail experience
  • Ability to present to small and larger groups
  • Ability to drive and enhance a robust culture focused on Food and Workplace Safety
  • Knowledge and interest in sustainability and sustainable food practices
  • Technical Proficiency: Technical skills, including a working knowledge of Google Suite tools (Sheets, Docs, Slides)
  • Ability to operate Web based ordering systems, process customer requests, changes to orders, menu updates and client profiles

Responsibilities

  • Assist in the creation of teaching kitchen curriculum
  • Support development of teaching kitchen recipes
  • Support BA chef training programs on campus
  • Ensure that classes are engaging, timely and conducted with a safety-first approach
  • Assist in the preparation of a well-balanced menu that meets the cultural and dietary needs of the Café guests.
  • Meet and exceed the expectations of the customer and client's perceived value.
  • Ensure that all products and ingredients that are used are purchased following Bon Appétit purchasing standards and sustainability commitments.
  • Represents the company in a courteous, efficient, and friendly manner in all customers, client and employee interactions
  • Perform quality work within deadlines with or without direct supervision
  • Work effectively as a team contributor on all assignments
  • Teaches and adheres to Bon Appétit’s philosophy, culture and commitment to quality food and exemplary service
  • Supports the Teaching Kitchen Chef and Senior Teaching Kitchen Chef in the performance of the teaching kitchen program and curriculum.
  • Ensures all products and purchases meet Bon Appetit sustainability guidelines
  • Assists in the training of teaching kitchen assistants
  • Assists in ensuring the consistency of food preparations through use of BOH operating materials to meet QA standards and speed of service expectations
  • Organize, prepare for and facilitate or co-facilitate cooking classes in the teaching kitchen
  • Support special events in teaching kitchen space through scheduling, preparation, and organization.
