About The Position

As a Sous Chef, you will be responsible for the proper preparation of the planned menu in the absence of the Executive Chef and assist in the supervision of all kitchen employees.

Requirements

  • Have a minimum of two to three years' experience as a sous chef in a hotel, restaurant, club, or other similar institution.
  • Possess working knowledge of various computer software programs (MS Office, restaurant management software, POS).
  • Are knowledgeable about current culinary trends and best practices.
  • Have strong management and communication skills.
  • Have post-secondary courses in Restaurant Management, Nutrition, or a related field.
  • Are ServSafe Certified.

Nice To Haves

  • Hold a degree or certificate from a culinary institute (preferred).

Responsibilities

  • Clarify and organize all evening paperwork and post the next day's production schedule.
  • Assist the kitchen staff in all aspects of daily assignments, as required.
  • Inform the Executive Chef of all activities and operational problems, making suggestions for improvement and corrections as needed.
  • Conduct daily shift change walk-throughs of kitchen staff.
  • Ensure that each plate leaving the kitchen meets high presentation standards, is a quality product, and is properly portioned.
  • Direct the kitchen in the absence of the Executive Chef.
  • Assist in creating, planning, costing, and executing menus, theme buffets, specials, and holiday menus.
  • Handle food orders, production sheets, and related material.
  • Execute all catered and special functions.
  • Maintain a high level of customer satisfaction for our residents and their guests.
  • Ensure the appearance, cleanliness, and service of the facility meet or exceed Health Department standards through routine, daily cleaning procedures.
  • Maintain daily, weekly, and monthly statistical information as required.
  • Use time, material, and equipment properly to eliminate waste and unnecessary expense.
  • Maintain good working relations with employees; illustrate leadership to promote unity of effort, group pride, harmony, and teamwork.
  • Ensure that the Food and Beverage department meets all standards in accordance with State and Federal Health Survey processes.
  • Provide staff education to kitchen employees in accordance with the staff education program.
  • Offer on-the-job training for food preparation and kitchen employees.
  • Develop work assignments for all kitchen personnel, assigning special jobs and spot-checking work to ensure standards are met.
  • Promote teamwork within the department and between departments to ensure smooth operations and quality service to residents, co-workers, and guests.
