Key Responsibilities: Oversee and manage kitchen staff, ensuring training and adherence to Levy standards. Executes menus in accordance with Levy Core Signatures and brand standards. Collaborate with Sr. Sous Chef, Executive Chef, and across departments to execute variety of menus that highlight fresh, innovative and signature dishes for various event types and sizes, including high volume catering. Foster a positive, team-oriented work environment through clear communication, recognition and accountability. Assist Sr. Sous Chef in performance management of team members including development, counseling, and corrective action. Enforce safety standards and food safety compliance, including proper food handling, cross contamination prevention, equipment usage, cleanliness, and maintaining safe food temperatures. Oversee inventory management by managing stock levels; complete production logs, monitor portion control and waste/spoilage/gratis logs. Oversee inventory counts daily and monthly; participate in month end inventory procedures. Support recruitment and onboarding of new team members; including department training. Assist with and execute accurate labor forecasting and labor efficiency. Reports to Sr. Sous Chef and General Manager. Other duties as assigned. Supports other Levy locations/properties as needed.

Requirements

  • Requires knowledge of food safety, sanitation standards, and responsible alcohol service.
  • Excellent communication and computer skills are needed, including knowledge of MS office products.
  • ServSafe Alcohol Certification, ServSafe food handler certification, and/or Title 4 may be required.
  • Ability to work a flexible schedule including nights, weekends, and holidays based on event needs.
  • Ability to stand and walk for prolonged periods, ascend and descend stairs
  • Exposure to heat, steam, and cold temperatures within the kitchen environment.
  • Some sedentary work including sitting in office at computer for administrative duties.
  • Ability to lift, push, pull, and carry up to 50 lbs.
  • Manual dexterity and coordination to perform tasks such as chopping, cutting, and food preparation.
  • Ability to bend, stoop, and kneel.

Nice To Haves

  • 3+ years of experience or progressive culinary experience, leadership experience preferred.
  • Culinary degree or equivalent professional training preferred.
