About The Position

Villa Roma Resort & Conference Center is seeking a talented and ambitious culinary professional to lead our newest dining concept, Alturra, a Japanese-Peruvian fusion restaurant located at our ski chalet. Requirements

  • Three to four years of professional culinary experience
  • Demonstrated proficiency in Japanese cuisine. This may include formal training in Japanese culinary techniques, substantial experience in a Japanese or Japanese-influenced kitchen, or a combination of both.
  • Strong organizational abilities
  • Clear communication skills
  • The temperament to lead a kitchen team through demanding service periods.
  • ServSafe certification or equivalent food safety credentials

Nice To Haves

  • Familiarity with Peruvian ingredients and preparations is advantageous but not required; a willingness to learn and genuine enthusiasm for the cuisine is essential.
  • A culinary degree or equivalent professional training is preferred.

Responsibilities

  • Oversee all aspects of Alturra's kitchen operations, including menu development and execution, with particular emphasis on authentic Japanese techniques integrated with Peruvian flavors and ingredients.
  • Responsibility for food quality, consistency, and presentation across all service periods.
  • Recruit, train, and supervise kitchen personnel, establishing standards for performance and professional conduct.
  • Inventory management, vendor relationships, and food cost control.
  • Ensuring strict compliance with all health and safety regulations.
  • Collaboration with resort management on special events, seasonal offerings, and promotional menus.
  • Adapt to the seasonal rhythms of a resort property, including heightened activity during ski season and holiday periods.
