About The Position

The Diplomat Beach Resort Hollywood, Curio Collection by Hilton is searching for a talented Sous Chef to help lead their culinary team at Point Royal! The ideal candidate is a highly creative, driven culinary professional with 3-5 years of leadership experience in a high-volume kitchen; hotel experience is required and union environment experience is preferred. They will manage a team of 16 and report to the Chef de Cuisine. Strong skills in team development, mentoring, scheduling, ordering, inventory, and cost control are essential, along with expertise in food safety, sanitation, line checks, prep lists, and menu development. Excellent communication across teams and a passion for food, creativity, and excellence are key. Prior Sous Chef experience is preferred. Shift Pattern: Full-Time/ Full availability is needed including weekdays, weekends, and holidays.

Requirements

Responsibilities

  • Assist the Executive Chef in the direction and oversight of all culinary operations, including preparation and production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulation, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability.
  • Create and implement menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Executive Chef and Director of Food and Beverage, as needed.
  • Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards.
  • Assist in monitoring and developing team member performance to include supervision, conducting counseling, assisting with evaluations, training, scheduling and assigning work, and delivering recognition and reward.
