Requirements

  • Culinary Degree, or comparable four year culinary development experienceAt least 7 years of relevant culinary experience including at least 3 years of culinary management experience
  • ServSafe CertificationWorking knowledge of basic kitchen operations and food safety standards
  • Excellent verbal and written communication skills

Nice To Haves

  • Knowledge of P&L accountability and contract-managed service experience is desirable

Responsibilities

  • Maintains high standards for all implemented Food Programs, workplace safety and food safety
  • Demonstrates proficiency in menu development, cost controls, purchasing and inventory.
  • Utilizes knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Executes menus
  • Ensures team members have the tools necessary to complete their job
  • Ensures show quality standards are maintained at all times
  • Regularly obtains feedback from clients and guests to improve operations
  • Supports and communicates Levy initiatives
  • Responds and assist in any departmental guest service issues
  • Holds team accountable to steps of service to deliver great guest servic
  • Executes preventive maintenance schedule as set forth by Director of Purchasing
  • Conducts daily walkthroughs in culinary areas
  • Practices proper product control and handling of all inventory and equipment
  • Achieves daily assigned cost goals
  • Ensures that all security, safety, and sanitation standards are achieved
  • Forecasts and adequately schedules team members to meet operational needs and desired targets
  • Performs other duties as assigned
