What you will have an opportunity to do: The iconic Hotel Roanoke & Conference Center is seeking an experienced and passionate Senior Sous Chef to join our culinary leadership team. This role is a key partner to the Executive Chef and supports culinary operations across three distinctive food & beverage outlets and a high‑volume banquet and conference operation. Position Summary The Senior Sous Chef is responsible for assisting in the overall management of kitchen operations, ensuring consistent execution of exceptional food quality, maintaining sanitation and safety standards, and leading, training, and inspiring culinary teams across all outlets and banquets. This position serves as a hands‑on leader and operational support to the Executive Chef.

Requirements

  • Minimum 5–7 years of progressive culinary experience, with preference given for experience in resort, hotel, or high‑volume multi‑outlet environments
  • Prior Sous Chef or Senior Sous Chef experience required; banquet experience strongly preferred
  • Strong leadership and people‑development skills with a proven ability to manage large teams
  • Solid understanding of food cost controls, scheduling, and inventory management
  • Ability to work flexible hours, including evenings, weekends, and holidays
  • Culinary degree or equivalent professional experience preferred
  • ServSafe certification (or ability to obtain)

Responsibilities

  • Assist the Executive Chef in overseeing daily kitchen operations for three outlets and banquet production
  • Lead and mentor sous chefs, line cooks, and culinary support staff, fostering a positive and professional kitchen culture
  • Ensure consistent food quality, presentation, and adherence to brand and recipe standards
  • Supervise banquet execution, including large‑scale events, conferences, and special functions
  • Assist with menu development, seasonal offerings, and special events
  • Support food cost management, inventory control, ordering, and waste reduction initiatives
  • Maintain strict compliance with health, safety, and sanitation regulations (ServSafe standards)
  • Participate in scheduling, performance coaching, and disciplinary actions as needed
  • Step in to lead kitchen operations in the Executive Chef’s absence
