Requirements

  • Minimum 7+ years in food and beverage operations, including hands-on management of independent restaurants, country clubs, hotels and banquet departments.
  • Proven ability to develop, manage, and optimize operational budgets, ensuring profitability and cost control.
  • Labor Control & Scheduling Expertise: Skilled in labor forecasting, scheduling, and controlling labor costs while maintaining high service standards.
  • Innovative Leadership: Demonstrated creativity in modernizing and improving restaurant and banquet operations.
  • Strong knowledge of food safety, quality standards, and compliance regulations.
  • Ability to recruit, train, and mentor teams to foster a high-performance culture.
  • Experience using operational metrics and analytics to inform strategy and continuous improvement initiatives.

Responsibilities

  • Oversee the Food & Beverage operations and assist in the direction and organization of activities and services of all hotel food and beverage outlets.
  • Provide consistent support to all staff during peak restaurant hours and banquet events on evenings, weekends and holidays.
  • Develop and implement schedules for the food & beverage operations to maintain productivity and achieve profitable results.
  • Plan and direct the staff to meet the daily needs of the operations.
  • Observe food & beverage outlet operations and take necessary action to ensure all standards are being met.
  • Ensure compliance with all Hilton's policies and procedures, and brand standards that relate to food and beverage.
  • Implement effective cost control of food, beverage, labor and other operating expenses.
  • Monitor the food & beverage budget to ensure efficient operation and that expenditures stay within the budget limitations.
  • Hire, train, supervise, develop, discipline and counsel all food & beverage staff.
  • Conduct daily preshifts and monthly F&B meetings to ensure effective communication across the food & beverage team.
  • Attend mandatory meetings, including divisional meetings, labor meetings, leadership meetings, etc.
  • Regularly review and evaluate customer satisfaction of the individual outlets.
  • Investigate and resolve any food quality and service complaints.
  • Monitor, review and provide performance feedback to all food & beverage staff.
  • Partner with leaders from culinary and commercial teams in creation and merchandising of attractive menu designs.
  • Participate in the development of the annual budget, develop short and long term financial operating plans.
  • Conduct regular inventory of china, glassware, silverware, etc.
