The Savory Department Manager is responsible for all operations of the savory department. This is a full-time, exempt (salaried) role which reports to the General Manager. This position’s responsibilities include, but are not limited to: PLANNING Conducts and delegates research and development for new menu items, focusing on seasonality and quality. Anticipates the savory department’s ingredient needs and orders accordingly; communicates with the Facilities and Logistics Supervisor about ordering needs. Anticipates periods of high sales, including weekends and holidays, ensuring that the department is adequately staffed for these periods and sufficient quantities of ingredients are on hand. Executes, in a timely manner, all necessary tasks for bi-monthly menu changes (submitting items for costing, discussion of holiday specialty items, team training on execution of dishes, etc). Creates prep list and outlines service station assignments for each day to allow for a successful service. TEAM Continuously coaches and trains the savory team on the standards, practices, and culture of Dozen Bakery. Maintains a working knowledge of all Dozen products in order to inform and educate customers and staff. Conducts monthly meetings for the savory staff to provide new information, address any issues, and recognize the hard work of each person in their department. Ensures all team members are following food safety practices at all times. Participates in weekly managers meetings in order to collaborate and share information with the owner and other managers. Documents any performance or conduct issues of members of the savory team; creates a specific action plan to correct any documented issues. Ensures that members of the savory team have the resources and materials available to be successful in their roles. Monitors the line each day and assists when necessary in order to ensure speed and accuracy of production; plans and assists with covering employee breaks. Promotes growth and development of team members, including Shift Leads. ADMINISTRATIVE Writes the weekly schedule three weeks in advance for the savory team (including dishwashers), ensuring adequate coverage each day for department needs and needs of the business. Assists in sourcing, ordering, and receiving of all necessary ingredients, ensuring all ingredients are of the highest quality according to Dozen’s values; ensures ingredients align with cost effectiveness. Writes accurate recipes for each menu item in order to ensure consistency of preparation. Tracks weekly attendance and follows-up with team members when necessary. Delivers annual assessments of team members in the spirit of constructive criticism and professional development. Works collaboratively on monthly menu changes with other department leaders to create a cohesive menu across all of Dozens’ products (menu development, allergen accuracy, description accuracy). Ensures all proper logging (temperatures, sanitation, production) are complete and accurate, following up with team members if necessary. Updates recipes as needed; communicates all changes to the team and management in order to ensure accuracy of menu and customer communication. Posts weekly updates to the team communication group to ensure all team members are well informed about pertinent information. QUALITY Monitors and coaches each member of the savory team regarding quality standards of the menu items each person is responsible for preparing. Leads the savory team to strive for consistency in appearance and flavor when preparing menu items. Remains mindful of Dozen’s brand at all times; works to protect the continuity and customer image of Dozen’s brand. Ensures that the savory department is following all food safety regulations at all times. Teaches and monitors team regarding proper food safety procedures such as temperature logs, proper sanitation and proper food holding techniques Maintains quality of physical space and equipment through proper handling, use and cleaning. PERSONAL LEADERSHIP Leads the team at Dozen by example, with empathy, kindness, and humility. Communicates clearly and compassionately with customers and staff. Maintains a good record of attendance and punctuality. Works at least one weekend day weekly. Ensures that personal schedule reflects the needs of the business and of the team.
