About The Position

As the face of MCR for new hires and team members, you will exemplify MCR's values and set a great example by always demonstrating excellent guest service and professionalism. You will assume overall responsibility for the efficient operation of the individual kitchen, including scheduling and training kitchen staff, planning daily specials, and providing input to the Executive Chef on related procedures and operations. Your role will also involve checking portions and quality to ensure they conform to standards, maintaining security of all products, supplies, and equipment, and overseeing the cleanliness and organization of kitchen storage areas. You will ensure all food items are prepared fresh daily and maintain a clean, sanitary kitchen. Additionally, you will manage kitchen employee files, control energy costs, order necessary products, and train Sous Chefs and cooking personnel. You will assist in establishing effective internal controls and ensure maximum standards of service to guests. Communication with front of house management is essential to maintain consistency in operations, and you will be responsible for controlling food costs and managing kitchen payroll/timecards. You will also conduct interviews and select candidates for hiring consideration, mentor kitchen employees, and create a positive work environment.

Requirements

  • Ability to obtain a Class III B+ gaming license.
  • Training in sanitation laws and procedures required.
  • Culinary Arts Degree required.
  • Minimum of 5 to 7 years' experience as a Sous Chef or Restaurant Chef overseeing multiple outlets required.
  • Minimum of 1 to 2 years of Kitchen management experience required.
  • Previous experience in supervising a staff of one hundred or more employees required.
  • Valid WA State Health Card/Food Handler permit required.
  • Must have valid Serve Safe Certificate.

Responsibilities

  • Provide input to Executive Chef on related procedures and operations.
  • Check portions and quality to ensure they conform to standards.
  • Establish and maintain security of all products, supplies, and equipment.
  • Provide daily/weekly prep and cleaning list for staff.
  • Oversee the cleanliness and organization of walk-ins and all kitchen storage areas.
  • Ensure all food items are prepared fresh daily.
  • Maintain a clean, sanitary kitchen, dish room, and storeroom.
  • Maintain kitchen departmental employee files including performance appraisals and disciplines.
  • Control energy costs in the kitchen.
  • Order all necessary products, equipment, and small wares for the individual outlet.
  • Train Sous Chefs and cooking personnel in all necessary tasks required for food preparations.
  • Assist with establishing and maintaining effective internal controls within the outlet.
  • Ensure maximum standard of service to guests is met.
  • Communicate with front of house management to ensure consistency in operations.
  • Control food costs by establishing purchasing specifications and waste control procedures.
  • Responsible for all kitchen employee payroll/timecards.
  • Conduct interviews and select candidates for hiring consideration.
  • Perform other supervisory functions as requested by Executive Chef and Assistant Executive Chef.
  • Mentor and establish adequate training for Muckleshoot Tribal Member Kitchen employees.
  • Create, maintain, and facilitate a positive work environment.
