About The Position

The Production Line Lead executes standard operating procedures of the meat tempering process and combo packaging for good shipment, all while ensuring safe operations of equipment and following prescribed safety standards for lifting and movement. Plays a key role in producing a high quality food safe product per customer requirements.

Requirements

  • High School Diploma or GED.
  • 2+ years working in a food manufacturing plant.
  • Experience in performing inspections, conducting tests, and understanding food safety regulations (e.g., HACCP, Good Manufacturing Practices).
  • Forklift Certification Required.
  • Experience with Frozen Products and/or temperature-controlled environments.

Nice To Haves

  • Certification in HACCP (Hazard Analysis and Critical Control Points) is preferred.

Responsibilities

  • Oversee the function of Production Line Associates executing the tempering process.
  • Train all staff members in this function.
  • Ensure all employee certifications are kept current.
  • Conduct safety audits and report on standard safety protocols compliance and/or retraining needs.
  • Maintain all required training documentation.
  • Maintain equipment in their area and necessary records regarding maintenance.
  • Work with Plant Manager and provide input and recommendations for performance feedback and disciplinary actions.
  • Create and manage employee schedules.
  • Manage the process by transferring frozen meat into tempering equipment.
  • Monitor temperature using thermometers or automated systems to ensure it meets requirements.
  • Ensure that the meat remains in the tempering area for the appropriate amount of time.
  • Trim, sort, or portion the meat once it reaches the correct temperature.
  • Ensure that portions of meat are weighed according to production standards.
  • Inspect meat for proper thawing consistency, texture, and any signs of spoilage or contamination.
  • Identify and remove any meat that doesn’t meet quality standards.
  • Operate and maintain specialized tempering machines or refrigerated chambers.
  • Regularly clean the equipment and work areas to comply with food safety regulations.
  • Check for any malfunctions in the tempering machinery and report issues to the maintenance team.
  • Prepare meat for further packaging once properly tempered.
  • Move tempered meat products into packaging per standard operating procedures.
  • Follow all safety protocols, including proper lifting techniques and using appropriate personal protective equipment (PPE).
  • Maintain accurate records of the meat's temperature and time spent in the tempering process.
  • Follow sanitation and hygiene practices to avoid cross-contamination.
  • Work closely with other production associates to ensure the smooth flow of the tempering process.
  • Communicate any issues such as temperature inconsistencies, equipment malfunctions, or quality problems to supervisors.
  • Ensure that proper tracking documentation is maintained for each batch of meat being tempered.
