About The Position

The Lead Sommelier at Fontainebleau Florida Hotel is responsible for overseeing the beverage service operations, particularly focusing on wine service. This role involves mentoring staff, enhancing guest experiences through exceptional wine service, and ensuring high standards of quality and hygiene in the bar and wine team. The Lead Sommelier will also analyze beverage sales, manage inventory, and conduct training to improve staff knowledge and service delivery.

Requirements

• Familiarity with wine service concepts, practices, and procedures.
• Familiarity with food service practices and procedures.
• Effective supervisory and communication skills.
• Strong organizational and problem-solving skills.
• Ability to communicate effectively and maintain working relationships with staff.
• Minimum of three years relevant food & beverage management experience in high-quality, high-volume establishments.
• High school education or equivalent; college degree preferred.

Responsibilities

• Oversee the daily beverage service operations and ensure quality standards for wines.
• Manage the bar program, including purchasing and inventory of all liquor.
• Analyze daily/weekly/monthly beverage sales to identify opportunities for increasing profitability.
• Prepare daily/weekly reports using Avero.
• Foster an environment that encourages improvements to products, processes, and service.
• Resolve guest concerns and implement effective resolutions.
• Schedule labor force and assign work for the beverage service team.
• Lead and manage the bar and wine team staff, maintaining high standards of quality, health, and hygiene.
• Plan, manage, and monitor work, including training and coaching staff.
• Conduct training to ensure staff have strong product knowledge and can upsell effectively.
• Monitor, review, and provide feedback on individual performance, setting objectives in line with performance reviews.
