About The Position
Prep Cook – Trapper's Sushi (Lacey, WA) Pay: $18.25-20.75 per hour + Tips Trapper's Sushi is growing in Washington, and we're looking for a dependable, detail-oriented Prep Cook to support our Lacey kitchen team! Our prep crew sets the foundation for every great service, and we're looking for someone who can keep us organized, efficient, and ready to roll (literally). Position Overview The Prep Cook is responsible for preparing ingredients, portioning items, following recipes, and ensuring the kitchen has everything needed for smooth service. This role focuses on consistency, organization, and maintaining strict food safety standards.
Requirements
- 1+ year of kitchen or prep experience preferred (but we're happy to train motivated candidates).
- Strong attention to detail and consistency.
- Ability to follow recipes and portion standards accurately.
- Good time management and organization skills.
- Washington Food Handler Certification (or ability to obtain shortly after hire).
- Ability to work evenings, weekends, and holidays if needed.
Responsibilities
- Wash, chop, portion, and prepare ingredients according to recipes and standards.
- Maintain clean, well-organized prep areas and storage spaces.
- Label, date, store, and rotate all ingredients using FIFO practices.
- Assist with daily batch prep, sauces, tempura mixes, fry items, vegetables, proteins, and sushi station ingredients.
- Support sushi chefs and line cooks by ensuring ingredients are stocked and ready.
- Follow all food safety guidelines and Washington food handling requirements.
- Help with unloading deliveries, storing products, and basic inventory tasks.
