About The Position

The position involves processing raw food items for use in recipe production and assisting with the preparation and presentation of menu items according to established recipes and production guidelines. The role also includes utility work as directed by the Chef and maintaining strict sanitation of the work area, including equipment, floors, and walls.

Requirements

• Basic knowledge of general kitchen and ingredient offerings.
• Knowledge of food production and preparation techniques, including sanitation and storage.
• Knowledge of Health Department Regulations related to food storage, preparation, and services in a CCRC.
• Ability to use and maintain kitchen equipment.
• Good communication skills.

Responsibilities

• Process raw food products for use in recipe production according to production sheets.
• Report repair and maintenance needs to the Production Manager.
• Assist in washing and restocking all china, glassware, and silverware as needed.
• Assist in the production of menu items for both Independent Living and Healthcare Services production.
• Maintain a high standard of quality in food preparation, portion control, and serving.
• Ensure proper food storage by sealing, labeling, and dating items before placing them in the refrigerator or freezer.
• Review and follow menu procedures, making changes only in consultation with the Production Manager/Director of Dining Services.
• Ensure all knives and utensils are clean, sanitized, and properly stored when not in use.
• Maintain cleanliness of wiping cloths used for counters and equipment surfaces.
• Ensure proper sanitation and safety of the food preparation area and equipment.
• Make daily inspections of the work area to assure sanitation and safe working conditions.
• Wash and clean utensils and equipment utilized in production.
