About The Position

Reporting to the Sr. Sous Chef and Executive Sous Chef, the PM Sous Chef is responsible for leading the evening production of fresh, ready-to-eat salads, sandwiches, and breakfast items. This position supervises the grab-n-go production team and collaborates with other departments to ensure timely, safe, and consistent output of high-quality packaged food.

Responsibilities

• Provides leadership and direction to PM kitchen employees, including training and coaching
• Manages packaged grab-n-go production to ensure consistency, timeliness, and adherence to quality and labeling standards
• Supervises the pack-out lead and supports the closing team, including porters, to ensure smooth end-of-day operations
• Coordinates and communicates effectively with internal departments to ensure seamless production and distribution workflows
• Constantly works to improve production practices, systems, and standards
• Communicates with other chefs and managers to maintain alignment on goals and expectations
• Clearly defines expectations for the team and holds individuals accountable
• Delegates fairly and consistently to develop and motivate the team
• Supports the Executive Sous Chef in maintaining food safety and sanitation compliance
• Continuously reviews recipes and production sheets to ensure clarity, accuracy, and adherence to standards
