Manage, direct and lead commissary associates to meet daily production goals of the commissary operations.Food safety Ensure associates are following proper food safety guidelines and regulations.Utilize Temperature system to monitor safety walks and cook / cool temps.Food Quality/ConsistencyEnsure recipe accuracy and yields.Spot check and test product throughout the kitchen.PurchasesWork with buyer and the Director of Commissary to review purchases and products to see if we are purchasing the best products for our business.Take over Bunzl purchasing.Equipment efficienciesEquipment audits to ensure associates know how to use all equipment.Work to create a PM schedule with the in-house maintenance team.Product DevelopmentNew recipe developmentSeasonal menu reviewHoliday production and needs.AD planningWork with production team and the Dir. of Commissary on company circulars. Hiring, Promoting, and recruiting of associates.New hire training and training programCaterease power user and train catering team and other key associates on how to use it. Associate accountability with job performance and company policyDirect reports include Production Mgr., Packing Supervisor, Catering Supervisor, and Receiver.Other duties as assigned by supervisor
